Veg Kolhapuri Recipe is a spicy authentic Maharashtrian recipe. This is a mixed vegetable curry with thick and spicy coconut and cashew nuts based gravy. Vegetable Kolhapuri can be served with roti, parata or poori.

Authentic Spicy Kolhapuri Vegetable

Ingredients For Veg Kolhapuri Recipe:

Ingredients For Masala Powder:

  • 1 bay leaf
  • 2 cloves
  • 1 black cardamom
  • 1/2 mace
  • 1″ cinnamon stick
  • 1/2 star anise
  • 2 green cardamom
  • 10 fenugreek seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp peppercorns
  • 5 dry red chillies
  • 1 tbsp coriander seeds
  • 1 tbsp sesame seeds
  • 1 tsp poppy seeds
  • 1/3 cup grated coconut (fresh or frozen)

Ingredients For Cashew Paste:

  • 6 cashewnuts
  • 1 tbsp melon seeds

Ingredients For Gravy:

  • 1 medium size onion, finely chopped
  • 1 medium size tomato, finely chopped
  • 1 tbsp ginger garlic paste
  • 1/3 cup carrots
  • 1/3 cup beans
  • 1/3 cup green peas (fresh or frozen)
  • 1/3 cup potato
  • 1/4 tsp turmeric powder
  • 2 tbsp coriander leaves, roughly chopped
  • salt to taste
  • 2 tbsp oil

Ingredients For Tadka:

  • 1 tsp mustard seeds
  • 2 dry red chillies
  • 2 tsp oil

How To Make Vegetable Kolhapuri Gravy with Step By Step Photos:

  • Heat a pan with 2 tsp of oil and add bay leaf, cinnamon, cardamom, black cardamom, cloves, mace and star anise. Give a good stir.
  • Then add coriander seeds and dry red chillies. Toss for few seconds.
  • Add fenugreek seeds, cumin seeds and peppercorns. Again toss for a min.
  • Now add poppy seeds, sesame seeds and shredded coconut. Toss on medium low flame until all the spices releases nice aroma and the grated coconut turns into nice golden yellow color.
  • Remove from flame and allow it to cool and make a pine powder.
  • Soak melon seeds and cashes in water for 10 mins, then make a paste and keep aside.
  • Chop all the vegetables into small pieces or your desired shape. Boil carrots, beans, potatoes and green peas in water until 75% cooked.
  • Heat a pan with oil and add chopped onions. Saute on medium low flame until they turn into golden yellow color.
  • Add chopped tomatoes, turmeric powder and required quantity of salt. Cook until the tomatoes become mushy and soft.
  • Add ginger garlic paste and saute until the raw smell disappears.
  • Now add cooked vegetables and ground masala powder.
  • Give a good stir and add 2 cups of water.
  • Cover with a lid and cook on medium low flame for 10 mins.
  • Add cashew melon paste and mix well.
  • Cook for another 5 mins or until you get the desired consistency.
  • Finally check the salt and add roughly chopped coriander leaves and turn off the flame.
  • Take a separate pan and do the tadka with mustard seeds and red chillies.
  • Add¬†tadka to the cooked veg kolhapuri gravy and mix well.
  • Serve hot with butter naan, roti or parata.
