Spicy Potato Roast Recipe

Ingredients For Spicy Potato Roast Recipe:

  • 3 potatoes
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 2 tsp red chilli powder or to taste
  • 2 tsp coriander powder
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 1 tsp chana dal
  • few curry leaves
  • few doriander eaves, roughly chopped
  • 1 tbsp of oil
  • salt to taste

How To Make Spicy Potato Fry Recipe:

  • Wash and pressure cook potatoes on high flame for 2 whistles and simmer the flame and cook for further 8-10 mins. Turn off stove and allow it to cool and then remove the lid. Peel and roughly smash the potatoes and keep aside.
  • Heat a pan with oil and add mustard seeds. When they start to pop add chana dal and urad dal. Saute on low flame until they turn into nice golden yellow color.
  • Add chopped onions, curry leaves and required salt. Mix well and cook on medium high flame until they turn nice golden brown color. Add chopped tomatoes and stir well. Cover with a lid and cook until tomatoes become tender and juicy.
  • Add chili powder, coriander powder and turmeric powder. Give a good mix and saute for few seconds.
  • Add roughly smashed potatoes and mix gently. Don’t over smash the potatoes. Cook on medium low flame for further 8-10 mins. In-between stir well, so that the potato fry doesn’t burn at the bottom.
  • Check the salt and add roughly chopped coriander leaves and remove from stove. Serve hot or warm with sambar rice, lemon rice, tamarind rice, rasam or curd rice.
