Ingredients For Kolhapuri Chicken Curry Recipe:

  • 1/2 kg chicken
  • 1 medium size onion, finely chopped
  • 5 garlic cloves
  • 2″ ginger root
  • 1/4 tsp turmeric powder
  • coriander leaves for garnishing
  • salt to taste
  • 3 tbsp oil

Kolhapuri Masala Powder Ingredients:

  • 7 dry red chillies or to taste
  • 1/4 cup grated coconut (fresh or dry)
  • 1 tsp cumin seeds
  • 1 tsp sesame seeds
  • 1 tsp poppy seeds
  • 1/2 tsp peppercorns
  • 3 green cardamom
  • 1″ cinnamon stick
  • 3 colves
  • 1/2 star anise
  • 1 blade mace

How To Make Kolhapuri Chicken Curry Recipe:

Kolhapuri Masala Powder Preparation:

  • Take a pan and heat. Add grated coconut and dry roast until they turn into light yellow in color.
  • Then add cinnamon, cardamom, cloves, mace, star anise, peppercorns and cumin seeds.
  • Dry roast on low flame until you get a nice aroma.
  • Add red chillies and roast until coconut turn into nice golden yellow color.
  • Finally add poppy seeds and sesame seeds and roast for another 2-4 mins.
  • Remove from heat and allow them to cool. Then make a fine powder.

Kolhapuri Chicken Curry Preparation:

  • Clean, cut and wash the chicken pieces and keep aside.
  • Finely chop the onions and keep aside.
  • Make a paste with ginger and garlic and keep aside.
  • Marinate the chicken with little quantity of salt and half of the ground masala powder. Keep aside for 30 mins.
  • Now heat a kadai with oil and add finely chopped onions.
  • Saute on medium flame until they turn into nice golden yellow in color.
  • Add ginger garlic paste and saute until the raw smell disappears or the oil separates from the mixture.
  • Now add the marinated chicken pieces and mix well.
  • Add turmeric powder and give a good mix. Cook on medium flame for 5-7 mins.
  • Add remaining kolhapuri masala powder, required quantity of salt and 1 cup of water (Already we add little salt while marinate the chicken).
  • Mix well and cover with a lid and cook on medium flame until the chicken pieces become tender.
  • Remove the lid and check the salt. Add chopped coriander leaves and give a good mix and remove from heat.
  • Now your spicy and tasty Kolhapuri Chicken Curry is ready.
  • Serve hot or warm with roti, parata or rice.
