Kandi Pachadi

Kandi Pachadi is one of the popular chutney in Andhra. This coarsely ground thick pachadi is easy to make and goes well with hot plain rice and a dash of ghee.

Ingredients For Kandi Pachadi:

  • 1/2 cup kandi pappu/ tur dal
  • 1/2 tsp mustard seeds
  • 3/4 tsp cumin seeds
  • 15 fenugreek seeds
  • 1 tbsp coriander seeds
  • 6-7 dry red chillies
  • small lemon size tamarind
  • 1″ ginger, minced
  • salt to taste
  • 1 tbsp of oil

Ingredients For Popu/ Tadka/ Seasoning:

  • 1/2 tsp mustard seeds
  • 1/2 tsp minapa pappu/ urad dal
  • 1 spring curry leaves
  • 1/2 tbsp oil

How To Make Kandi Pachadi/ Tur Dal Chutney/ Paruppu Thogayal:

  • Wash and soak tamarind in water.
  • Heat a pan with 1/2 tbsp oil. Add mustard seeds, cumin seeds. When they start to pop add fenugreek seeds. Toss for few seconds.
  • Then add coriander seeds and dry red chillies. Saute on medium low for a min. Remove from pan and allow it to cool.
  • In the same pan add remaining oil and add tur dal (red gram dal) and roast it on low to medium flame till slightly red in color and you get a nice aroma. Remove from flame and allow it to cool.
  • Once cool, first grind the mustard seeds, cumin seeds, fenugreek seeds, red chillies, coriander seeds mixture into a powder.
  • Then add roasted tur dal, minced ginger along with soaked tamarindand salt. Sprinkle with little water and make coarse paste (You shouldn’t make it into a smooth paste).
  • Heat a pan with 1/2 tbsp of oil. Add mustard seeds. When they start to pop add urad dal and roast on medium low flame until they turn into golden yellow color.
  • Add curry leaves and toss them for a few seconds until the curry leaves flavor come out.
  • Turn off the stove and pour the seasonings to the ground kandi pachadi and mix well.
  • Check the salt and serve with hot steamed rice and ghee, Idli or Dosa.
