Kadai Chicken Recipe – Kadai Chicken is one of the easiest and tastiest North Indian Chicken curry Recipe. Kadai chicken is mildly flavored with spices, capsicum and onions. This karahi chicken goes well with roti, naan, parata or chapathi.

Kadai Chicken Recipe

Ingredients For Kadai Chicken:

  • 500g chicken (with bone or boneless)
  • 1 medium size onion finely chopped
  • 1 medium size tomato, finely chopped
  • 1 tbsp ginger garlic paste
  • 1 tsp red chilli powder or to taste
  • 1 tsp coriander powder
  • 1/4 tsp turmeric powder
  • 1 tsp garam masala powder
  • 1 tsp cumin seeds
  • 2-3 dry red chillies
  • 5-8 cashews
  • 2 tbsp fresh yogurt
  • 1 green capsicum, cut into cubes
  • 1 medium size onion, cut into cubes and layers separated
  • 3 tbsp oil
  • salt to taste

Kadai Masala Ingredients:

  • 5 red chillies or to taste
  • 1 tbsp coriander seeds
  • 1 tsp peppercorns or to taste
  • 3/4 tsp cumin seeds
  • 1/2 tsp fennel seeds

How To Make Kadai Chicken Recipe:

  • Heat a kadai and dry roast all the kadai masala ingredients on low flame until you get a nice aroma.
  • Remove from heat and allow to cool.
  • Make a coarse powder and keep aside.
  • Soak cashews in water for 10 mins and make a smooth paste and keep aside.
  • Heat a same kadai with 1/2 tbsp of oil and add cubed onions and capsicum.
  • Toss on medium flame until they turn into translucent.
  • Remove from kadai and keep aside.
  • Heat the same kadai with remaining oil.
  • Add cumin seeds and dry red chillies. When they start top pop add finely chopped onions.
  • Saute on medium flame until they turn into nice golden brown color.
  • Add ginger garlic paste and saute until the raw smell disappears or the oil separates from the mixture.
  • Add chopped tomatoes and saute till the tomatoes become soft and mushy.
  • Add red chilli powder, coriander powder and turmeric powder. Mix well and saute for few seconds.
  • Add yogurt (curd) and mix well. saute for 3-5 mins. Sitr well, so that they don’t burn at the bottom.
  • Add cashew paste and saute for another 3-5 mins. Stir continuously.
  • Add washed chicken pieces. Mix well and fry for 2 mins. Then add 1 or 1.5 cups of water and required quantity of salt.
  • Mix well and cover with a lid. Cook on medium low flame until the chicken pieces become tender. In-between stir well.
  • Now add freshly ground kadai masala powder and garam masala powder. Mix and fry for another 1-2 mins.
  • Add sauted onions and capsicums. Mix well and continue to cook for another 2 mins.
  • Do dot over cook the kadai chicken after adding onions and capsicum. Onions and capsicum should be crunchy.
  • Finally check the salt and remove from heat.
  • Serve hot and Enjoy!
