Ennai Kathirikkai Kulambu

Ennai Kathirikkai Kuzhambu Recipe is an authentic Tamilnadu dish made with fried eggplants cooked in a spicy tamarind gravy. This brinjal garvy is very yummy and goes well with plain steamed rice, roti or Dosa.

Ingredients For Ennai Kathirikkai Kuzhambu Recipe:

  • 6 small brinjals
  • 1 medium size onion, finely sliced
  • 2 medium size tomato, finely chopped
  • 6 garlic cloves
  • 5 red chillies or to taste
  • 2 tbsp coriander seeds
  • 1/2 tbsp peppercorns
  • 1/4 tsp fenugreek seeds
  • 1/2 tsp red chilli powder
  • 1/2 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/4 cup grated coconut (fresh or frozen)
  • small lemon size tamarind
  • 1 tsp mutard seeds
  • 1 tsp mustard seeds
  • 1/2 tsp urad dal
  • 2 spring curry leaves
  • few coriander leaves for garnishing
  • 4 tbsp oil
  • salt to taste

How To Make Ennai Kathirikkai Kulambu (Gutti Vankaya/ Stuffed Eggplant Curry):

  • Wash and soak tamarind in water and extract the juice and keep aside.
  • Heat a pan with 1/2 tbsp of oil. Add fenugreek seeds, coriander seeds, peppercors and red chillies. Roast on medium low flame until you get a nice aroma.
  • Then add sliced onions, garlic cloves, chopped tomatoes and required quantity of salt.
  • Mix well and  cover with a lid and cook on medium low flame until the onions become transparent and tomatoes become soft.
  • Now add red chilli powder, coriander powder and turmeric powder. Give a good mix and cook on medium low flame for further 2 mins.
  • Add grated coconut and mix well and cook for another 3-5 mins.
  • Remove from heat and allow it to cool for some time. Make a paste and keep it aside.
  • Wash and wipe it dry the brinjals and keep aside.
  • Take the brinjals (kathirikkai/ vankaya) and remove the stem and cut from the base end and make a slit.Slit each brinjals 4-8 sections.
  • Heat a pan with 2 tbsp of oil and add fry the eggplants until 75% done.
  • Remove from pan and keep aside.
  • Add remaining oil in the same pan and heat.
  • Add mustard seeds, cumin seeds, urad dal and curry leaves.
  • When they start to pop add the ground masala paste and mix well.
  • Cook on medium low flame for 10 mins or until the oil separates from the mixture.
  • Now add fried brinjals and give a good mix and cook for 3-5 mins.
  • Add tamarind extract along with 1 and 1/2 cup of water and give a good mix.
  • Cover with a lid and cook on low flame for 15 mins or until the brinjals become tender.
  • Finally check the taste and add roughly chopped coriander leaves.
  • Now your ennai kathirikkai kuzhambu is ready to eat. Serve hot with rice and vegetable stir fry.
