Egg Masala Recipe –  Egg Masala curry is very easy to make and very delicious and flavorful recipe. This egg masala gravy goes well with rice, Ghee Rice,  Biryani or Roti.

Egg Masala Curry

Ingredients For Egg Masala Recipe:

  • 3 boiled eggs
  • 1 medium size onion, finely chopped
  • 1 medium size tomato, finely chopped
  • 2 tsp red chilli powder or to taste
  • 2 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tbsp tamarind juice
  • 1 tsp mustard seeds
  • few curry leaves
  • few coriander leaves
  • 2 tbsp oil
  • salt to taste

Paste Ingredients:

  • 4 garlic flakes
  • 2″ ginger root
  • 4 tbsp shredded coconut

How To Make Easy And Delicious Egg Masala Curry Recipe:

  • Boil eggs, when cooled remove the shell and make slits along the length of each egg and keep aside.
  • Make a paste with paste ingredients and keep aside.
  • Heat a pan with oil and add mustard seeds.
  • When they start to pop add chopped onions and curry leaves.
  • Saute on medium flame until they turn into nice golden yellow color.
  • Add ground paste and saute until the raw smell disappears or the oil separates from the mixture.
  • Now add chopped tomatoes and required quantity of salt. Saute until the tomatoes become soft and mushy.
  • Add red chilli powder, coriander powder and turmeric powder. Mix well and saute for few seconds.
  • Add tamarind juice, eggs and 1 cup of water. Mix well and check the salt and bring it to boil.
  • Add coriander leaves and cook on medium flame until the curry thickens.
  • Serve hot with Biryani, Ghee Rice or Roti.
