Chole Recipe – Chole Channa Masala is a very popular Punjabi dish typically served with bhatura. One of the best Punjabi dishes is Punjabi style chole masala  is a high protein classic recipe with heady flavors.

Chole Recipe

Ingredients For Punjabi Chole Masala Recipe:

  • 2 cups chickpeas or kabuli chana
  • 1 large onion, finely chopped
  • 2 medium size tomato, finely chopped
  • 2 green chilies
  • 2 tsp ginger garlic paste
  • 2 tsp red chilli powder
  • 2 tsp coriander powder
  • 1/4 tsp turmeric powder
  • 1 tsp anardana powder (dried pomegranate seeds powder)
  • 1/2 tsp amchur powder (dry mango powder)
  • 1/2 tsp cumin powder
  • 1/2 tsp sonth (dry ginger powder)
  • 1 tsp garam masala powder
  • 3 cloves
  • 3 cardamom
  • 2″ cinnamon stick
  • 1 tsp cumin seeds
  • few coriander leaves, finely chopped
  • 2-3 tbsp oil
  • salt to taste

How To Make Punjabi Chole Recipe With Step By Step Photos:

  • Wash and soak the chickpeas with enough water for 8 hours or overnight. After soaking they will double up in size. drain the soaking water.
  • Pressure cook the chickpeas along with 2 cups of water, large pinch baking soda, a tea bag and little salt till soft.
  • The chickpeas should be soft and not be overcooked and mushy (It should get pressed easily with your fingers). Remove the tea bag  and keep aside the pressure cooked chickpeas.
  • Mix  anardhana powder, amchur powder, cumin powder and dry ginger powder in small bowl and keep aside.
  • Heat a pan with oil and add cardamom, cinnamon, cloves and cumin seeds.
  • When they start to pop add chopped onions and green chillies. Saute on medium flame until they turn into nice golden brown color.
  • Add ginger garlic paste and saute until the raw smell disappears or the oil separates from the mixture.
  • Add tomatoes and required salt (already we add little salt in chickpeas) and saute until the tomatoes become mushy.
  • Add chilli powder, coriander powder and turmeric powder. Saute for few seconds.
  • Add amchur powder, anardhana powder and dry ginger powder mix and stir well and saute for few seconds.
  • Add pressure cooked chickpeas along with water and if necessary add another cup of water. Check the salt and cover with a lid and cook on medium low flame for further 15-20 mins or or till you achieve a slightly thick gravy consistency. In-between stir well, so that they don’t burn at the bottom.
  • Add garam masala powder and give a good mix. Finally add chopped coriander leaves  and remove from heat.
  • Now your tasty Punjabi Chole Masala is ready to serve. Serve hot or warm with Bhatura, Parata or Roti.

Check the salt and cover with a lid and cook on medium low flame for further 15-20 mins or or till you achieve a slightly thick gravy consistency. In-between stir well, so that they don’t burn at the bottom.
