Chicken Dum Biryani With Tandoori Chicken

Ingredients For Chicken Dum Biryani Recipe:

For Chicken Gravy:

  • 1/2 kg chicken
  • 2 medium onions sliced thinly
  • 1 tbsp ginger garlic paste
  • 2 tsp biryani masala
  • 1 tsp red chili powder or to taste
  • 1/2 tsp cumin powder
  • 1/4 tsp tsp turmeric
  • 1/2 tsp garam masala powder (optional)
  • 2 green chilies slit
  • 1 cup thick fresh yogurt
  • 1 star anise
  • 3 green cardamoms
  • 4 cloves
  • 1 inch cinnamon stick
  • 1 mace
  • ½ tsp shahi jeera
  • 3 tbsp oil
  • salt to taste
  • handful of mint leaves, roughly chopped
  • handful of coriander leaves, roughly chopped

For Rice

  • 2 cups basmathi rice (preferably aged rice)
  • 8 cups of water
  • 1 small bay leaf
  • 2 inch thin cinnamon
  • 3 green cardamoms
  • 4 cloves

Optional Ingredients:

  • 2 tbsp of milk
  •  pinch of saffron
  • 1 tbsp ghee

Chicken Dum Biryani Recipe

How To Make Restaurant Chicken Dum Biryani At Home:

Rice Cooking Procedure:

  • Gently wash the rice for 2 or 3 times and soak for 30 mins.
  • Add 8 cups of water in a large pot. Add cinnamon, cardamom, cloves, bay leaf and required quantity of salt and bring it boil.
  • Add soaked and drained basmati rice and cook until the rice is 80 percent done. Drain the excess water with colander.

Biryani Chicken gravy Cooking Procedure:

  • Take a heavy bottomed sauce pan and heat with oil. Add sliced onions and saute until they turn into nice golden brown color. Remove from pan and keep aside.
  • Add star anise, green cardamoms, cloves, cinnamon stick, mace and shahi jeera in the same pan and saute for few seconds.
  • Add half portion of the fried onions and ginger garlic paste.
  • Saute on medium flame until the raw smell disappears or the oil separates from the mixture.
  • Add biryani masala, chilli powder, garam masala powder, cumin powder and turmeric powder. Mix well and saute for few seconds.
  • Add cleaned and washed chicken pieces and saute for 5 mins.
  • Add salt and mix well. Cover with a lid and cook for another 5 mins.
  • Add half portion of the roughly chopped coriander leaves and mint leaves. Mix well and cook for further 2 mins.
  • Add thick yogurt and mix well. Cover with a lid and cook on medium flame until the chicken pieces become tender and the gravy thickens. At this stage check the salt and reduce the flame.
  • Now layer the rice on top of the chicken gravy evenly.
  • Sprinkle the remaining fried onions, remaining mint leaves, coriander leaves and soaked saffron milk and ghee on the top.
  • Cover the biryani pot with foil and cover with a tight lid (Place a tight lid to trap the steam. If the lid is not tight then you can place a water filled heavy pot on top of the lid).
  • Now heat a griddle (old tawa or pan) and place the biryani pot on the top of the griddle and dum cook on low flame for 10 12 mins.
  • Switch off the stove and serve hot your chicken dum biryani with chicken curry and raita.

Note: First make chicken gravy and then cook rice and then layer it.
