Ingredients for chicken biryani:

  • 500g chicken (cut into medium size pieces)
  • 2 cups basmati rice
  • 4 tbsp ghee
  • 2 onion sliced
  • 1 tomato finely chopped
  • 5 green chillies or to taste
  • 2″ ginger root
  • 5 garlic flakes
  • a pinch saffron (optional)
  • ¾ cup coconut milk
  • 3¼ cup water
  • ½ cup coriander leaves (roughly chopped)
  • ½ cup mint leaves  (roughly chopped)
  • 2 cardamoms
  • 2 cloves
  • 1″ cinnamon stick
  • 1 star aniseed
  • 10 cashewnuts
  • 2 bay leaves

Chicken Biryani preparation:

  • Clean, wash the chicken pieces and drain all the water and keep aside.
  • Make a paste with ginger, garlic and green chillies.
  • Clean and wash the rice with plenty of water and keep aside.
  • Heat a pressure cooker with ghee.
  • Add cardamom, cinnamon stick, cloves, aniseed, bay leaves, cashew nuts and saut’e till the cashew nuts turn into nice golden yellow color.
  • Add sliced onions and saut’e till they turn into translucent.
  • Add ginger, garlic and green chilli paste. Saute till the raw smell disappears.
  • Then add chopped tomatoes and saute till they become tender.
  • Add chicken pieces, salt and mix well.
  • Cook on medium flame for 5-10 min. In between stir well, so that they don’t burn at the bottom.
  • Add washed basmati rice and combine well.
  • Add coconut milk,water, lemon juice, chopped coriander leaves and mint leaves.
  • Check the salt and close the pressure cooker.
  • When the first whistle comes then reduce the flame to low and cook for another 10 mins.
  • Remove from flame and set aside. Once the pressure is off, remove the lid.
  • Gently mix well and transfer into serving bowl.
  • Now your easy and yummy chicken biryani is ready to serve.
  • Serve hot or warm with raita, chicken curry or any of your favourite gravy .
