Cabbage Vepudu – How to make cabbage vepudu or cabbage stir fry recipe
Cabbage is a healthy protein enriched vegetable.
Cabbage vepudu (cabbage toor dal stir fry) is accompanied with sambar rice, kara kuzhambu (kara kulambu), rasam, etc..
Ingredients for Cabbage vepudu:
3 cups shredded cabbage
1/2 cup toor dal (kandhi pappu/ thuvaram paruppu)
2-4 green chillies (roughly chopped) or to taste
3 tbsp shredded fresh coconut (optional)
1 tsp urad dal (black gram/ minapa pappu/ ulundu)
1/4 tsp turmeric powder
3 garlic cloves, roughly crushed
few curry leaves
1/2 tbsp oil
salt to taste
Cabbage vepudu (cabbage stir fry/ cabbage poriyal) preparation:
Wash the shredded cabbage and drain all the water completely and keep aside.
Clean and wash toor dal and cook with required quantity of water.
Make sure that the dal is not cooked too soft or mushy.
Heat a kadai with oil and add urad dal. Saute for few seconds.
Then add crushed garlic, curry leaves, green chillies and saute till garlic turn into light golden yellow color.
Add turmeric powder and saute for 3-5 seconds.
Add washed and drained cabbage and mix well.
Cook on medium flame till the raw smell of cabbage disappears or till the cabbage is soft.
Add cooked toor dal and required quantity of salt and mix well.
Saute on low flame for further 5-10 min.
Check the salt and remove from heat.
Serve hot with sambar rice, kara kuzhambu, rasam, etc…
