Butter Murukku Recipe – Also known as Star Murukku are very light, crispy and crunchy snack recipe. Murukku (Janthikalu or chakli) is a traditional Indian snack made during festivals like Diwali and Krishna Jayanthi.

Butter Murukku Recipe

Ingredients For Butter Murukku Recipe:

  • 3 cups rice flour
  • 1 cup fried gram dhal flour (pottu kadalai, dalia or putnala pappu)
  • big pinch of asafoetida
  • 1 tbsp sesame seeds (optional)
  • 1 tbsp cumin seeds
  • 1 tbsp roughly crushed peppercorns
  • 2 tbsp hot oil
  • required quantity of salt
  • required quantity of water
  • oil for deep fry

How To Make Butter Murukku Recipe:

  • Make a fine powder with fried gram dal (pottu kadalai, dalia or putnala pappu) in a mixer griender.
  • Sieve the powder to eliminate the coarse particles.
  • Take a bowl and add rice flour, fried gram dhal flour, sesame seeds, cumin seeds, roughly crushed peppercorns, required quantity of salt and a big pinch of asafoetida.
  • Mix all the dry ingredients well.
  • Add 2 tbsp  of hot oil to the dry ingredients mixture and mix well. Adding hot oil gives the nice crispy and crunchy texture to the murukku.
  • Add required quantity water and knead into smooth and soft dough.
  • Dough should not be too stiff or too loose.
  • Heat a kadai with enough oil to fry.
  • Now take the murukku press with star shaped plate and stuff in a lump of dough and squeeze in hot oil.
  • Deep fry on both sides until they turn into golden yellow colour.
  • Remove from kadai and drain in paper towel to remove the excess of oil.
  • Allow them to cool and roughly crush the butter murukku into 3-4 inch pieces and store them in an air tight container.
  • This will be fresh for weeks in an air tight container.
