Avarakkai Poriyal – Broad Beans Stir Fry

Avarakkai Poriyal (Chkkudukaya Vepudu/ Broad Beans Stir Fry) – This is a very simple vegetable stir fry recipe. This poriyal goes well as a side dish for steamed plain rice with Sambar, Jeeraga Kuzhambu or Rasam.

Avarakkai Poriyal/ Chikkudukaya Vepudu

Ingredients For Avarakkai Poriyal:

  • 500g Avarakkai
  • 4 garlic cloves
  • 1 tsp red chili powder or to taste
  • 1 tsp urad dal
  • 1/2 tsp turmeric powder
  • 1 tbsp dry roast chana dal powder
  • 1 spring curry leaves
  • salt to taste
  • 1-2 tbsp oil

How To Make Avarakkai Poriyal (Flat Beans Stir Fry/ Chikkudukaya Vepudu):

  • Wash and remove the string of the beans and cut into 1″ pieces. Pressure cook with very little water for 1 whistle.
  • Roughly crush the garlic and keep aside.
  • Now heat a pan with oil and add urad dal.
  • When the urad dal turns into nice golden yellow color add crushed garlic and curry leaves.
  • Saute on low flame until the garlic turn into golden yellow color.
  • Add turmeric powder and give a good mix.
  • Now add cooked flat beans and required quantity of salt.
  • Mix well and cover with a lid and cook for 5mis on medium low flame.
  • Add red chilli powder. Mix well and saute for 2 mins on medium flame.
  • Add  2 tbsp dry roast chana dal powder and mix well. Saute on medium low flame for another 2-4 mins.
  • Finally check the salt and remove from heat. Now your easy and tasty avarakkai poriyal is ready to serve.
  • Serve hot with plain steamed rice and Sambar or jeeraga Kuzhambu.
