Arachuvitta Sambar Recipe

Ingredients For Arachuvitta Sambar:

  • 1 cup toor dal
  • 100 g beans or any vegetable of your choice
  • 1 medium size onion, finely sliced
  • 1 medium size tomato, finely chopped
  • small lemon size tamarind
  • 3/4 tsp mustard seeds
  • 3/4 tsp cumin seeds
  • 1/4 tsp fenugreek seeds
  • 1/4 tsp asafoetida
  • 1/4 tsp turmeric powder
  • 2 spring curry leaves
  • few coriander leaves, roughly chopped
  • salt to taste
  • 2 tbsp oil

To Roast And Grind:

  • 6-7 dry red chillies or according to your taste
  • 1 tbsp coriander seeds
  • 1 tbsp channa dal
  • 1/4 tsp fenugreek seeds

How To Make South Indian Arachuvitta Sambar Recipe With Step By Step Photos:

  • Heat a pan with little oil and add roast and grind ingredients. Roast on low flame until the channa dal and other spices turn into nice golden yellow color (constant stirring to ensure even roasting. Take care not to burn any spices).
  • Remove from flame and allow it to cool. Then make a coarse powder and keep aside.
  • Wash and pressure cook the toor dal until soft and mushy.
  • Soak the tamarind in warm water and take tamarind extract.
  • Cut beans into 2″ pieces. Boil beans with little salt untill half done. Once done, remove from heat and keep aside.
  • Heat a kadai with oil and add mustard seeds, cumin seeds and fenugreek seeds.
  • When they start to pop add sliced onions and curry leaves. Saute on medium high flame until they turn into translucent.
  • Then add asafoetida, chopped tomatoes and required quantity of salt. Cook on medium flame until the tomatoes become soft and mushy.
  • Now add half cooked beans and saute for further 3-5 mins.
  • Add turmeric powder and give a good mix.
  • Add tamarind juice and mix well and cook for further 5-7 mins.
  • Now add cooked and mashed toor dal with required quantity of water and bring it to boil. Adjust water consistency according to your choice.
  • Finally add ground coarse sambar powder and mix well.
  • Cook on medium high flame for further 3-5 mins and check the salt. Finally garnish with coriander leaves.
  • Now your easy and tasty arachuvitta beans sambar is ready to serve. Serve hot with steamed rice and potato fry.
