Ingredients For Aloo Dum Biryani Recipe:

Ingredients For Potato Gravy:

  • 1/2 kg potatoes, peel and cut into medium size cubes
  • 1/2 cup peas (fresh or frozen)
  • 2 medium onions, sliced thinly
  • 1 tbsp ginger garlic paste
  • 1 tsp red chili powder or to taste
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/4 tsp tsp turmeric
  • 1/2 tsp garam masala powder
  • 2 green chilies slit
  • 1 cup thick fresh yogurt
  • 1 star anise
  • 3 green cardamoms
  • 4 cloves
  • 1 inch cinnamon stick
  • 1 mace
  • ½ tsp cumin seeds
  • 1 bay leaf
  • 5 tbsp ghee or oil
  • salt to taste
  • handful of mint leaves, roughly chopped
  • handful of coriander leaves, roughly chopped

Ingredients For Rice Preparation:

  • 2 cups basmathi rice (preferably aged rice)
  • 8 cups of water
  • 1 small bay leaf
  • 2 inch thin cinnamon
  • 3 green cardamoms
  • 4 cloves

Optional Ingredients:

  • 2 tbsp of milk
  •  pinch of saffron
  • 1 tbsp ghee

How To Make Easy And Yummy Dum Aloo Biryani At Home:

Rice Cooking Procedure:

  • Gently wash the rice for 2 or 3 times and soak for 30 mins.
  • Add 8 cups of water in a large pot. Add cinnamon, cardamom, cloves, bay leaf and required quantity of salt and bring it boil.
  • Add soaked and drained basmati rice and cook until the rice is 80 percent done. Drain the excess water with colander.

Aloo Gravy Cooking Procedure:

  • Heat a pan with 3 tbsp of oil and add sliced onions and saute until they turn into nice golden brown in color. Remove from pan and keep aside.
  • In the same pan add potato cubes and fry until they turn into nice golden brown color. Remove from pan and keep aside.
  • Heat a heavy bottomed sauce pan with remaining oil and add star anise, green cardamoms, cloves, cinnamon stick, mace and cumin seeds in the same pan and saute for few seconds.
  • Add ginger garlic paste and saute until the raw smell disappears or the oil separates from the mixture.
  • Add green chillies and saute for a min.
  • Add half portion of the fried onions. Mix well and saute for few seconds.
  • Then add red chili powder, coriander powder, cumin powder, garam masala powder and turmeric powder.
  • Mix well and saute for few seconds.
  • Add yogurt and mix well.
  • Add required quantity of salt for the gravy and mix well.
  • Saute on medium flame until the oil separates from the mixture.
  • Add fresh or frozen peas mix well. Cover with a lid and cook for 2-4 mins.
  • Add fried potato cubes and mix well.
  • Add 1 cup of water. Mix well and bring it to boil.
  • Add roughly chopped coriander and mint leaves.
  • Mix well and cook until aloo peas gravy thickens. At this stage check the salt and reduce the flame.
  • Now layer the rice on top of the aloo peas gravy evenly.
  • Sprinkle the remaining fried onions, remaining mint leaves, coriander leaves and soaked saffron milk and ghee on the top.
  • Cover the biryani pot with foil and cover with a tight lid (Place a tight lid to trap the steam. If the lid is not tight then you can place a water filled heavy pot on top of the lid).
  • Now heat a griddle (old tawa or pan) and place the biryani pot on the top of the griddle and dum cook on low flame for 10 12 mins.
  • Turn off the stove and remove the biryani pot from the tawa.
  • Serve hot your Aloo dum biryani with chicken curry and raita.

Note: First make Aloo Peas gravy and then cook rice and then layer it.
